Yummalicious Chocolate Cupcake Recipe

This delicious chocolate cupcake recipe makes the best homemade chocolate cupcakes (or cake). They are moist and yummy and really easy to prepare. Since there are no eggs or dairy products included, this is a great chocolate cupcake recipe for vegans too.

Ingredients ...

  • flour (1 1/4 cups)
  • sugar (1 cup)
  • cocoa powder (1/3 cup)
  • baking soda (1 tsp)
  • salt (1/2 tsp)
  • warm water (1 cup)
  • vanilla extract (1 tsp)
  • oil (1/3 cup) *
  • white vinegar (1 tsp)

*Tip ... Replace all or part of your usual oil with melted coconut oil for moist and delicious cupcakes. It's good for you too! 

Instructions ...

  1. Preheat oven to 350°
  2. Lightly grease or fill cupcake pan with liners.
  3. Blend dry ingredients, mixing completely.
  4. Add in wet ingredients.
  5. Mix for approximately 2 minutes with electric mixer. Mixture should be smooth.
  6. Pour into baking cups, filling each 1/2 to 3/4 full.
  7. Bake for 17-20 minutes. Check at 17 minutes as ovens will vary. A toothpick inserted into the middle of a cupcake should come out clean.
  8. Let cool and add your favorite topping.

Cupcakes are perfect for parties. Make a ton of miniature-sized ones and supply small takeout boxes. Your guests can fill up their boxes with yummy edible party favors.

If you'd prefer to make a round two-layer cake, double this recipe. For a yummy surprise, make the icing in the middle a different flavor than the outside of the cake.

We have tried various flavors of icing on them and they are all delicious. If you are a super chocolate freak, then of course chocolate is the way to go. Too much? Try vanilla. My favorite is the raspberry ... mmm ... I think I need to go make some!

Update ... adding a little peanut butter to your icing makes these a peanut-butter-cup lover's dream. Sooooo good!
